Juan’s tour is an extension of his brothers’ coastal walking tour, offering half and full day tours to a range of local environments but with a focus on smaller groups.  \u003C/p\u003E\r\n\u003Cp\u003EAll three are children of retired ranger, Bennett, a Kuku Yalanji man, and Louise, a former school teacher from the Torres Strait. And all are part of a tight-knit family that extends to 220 members … and counting. Together they make up one of the five Kuku Yalanji clans who have staked their Country for tens of thousands of years on the coastal side of the Great Dividing Range.  \u003C/p\u003E\r\n\u003Cp\u003ELooking at the faces on the calendar, it’s easy to see that the Walker family is as tightly woven as the dilli bag crafted by Juan’s younger cousin, Delissa Walker, who joins us for a day. (Delissa is one of the last of her clan to practice weaving, a craft she learned from her Nanna. Her works are on display in various art galleries around Australia.)   \u003C/p\u003E\r\n\u003Cp\u003E“Mum’s family are from the Torres Strait and they taught us fishing and collecting coastal food. We did rainforest stuff with Dad’s family; he showed us country,” says Juan as we prepare to spear a bored lump of sand some twenty metres in front of us. It’s practice for our crabbing expedition.  \u003C/p\u003E\r\n\u003Cp\u003EJuan has designed his tour based on the activities he did as a kid aged around 10 or 11. That included foraging for food with his parents and learning bush survival methodologies. For two hours we are going to walk in the footsteps of his ancestors.  \u003C/p\u003E\r\n\u003Cp\u003EWe start at the Callophylum, a massive tree that lines Cooya Beach. This, he tells us, is the equivalent of the world’s original desal plant; a tree that has the ability to draw salt from the roots up through the trunk and into the leaves until they fall off - releasing the tree from the very thing that can kill it.   \u003C/p\u003E\r\n\u003Cp\u003EThe Callophylum is also conveniently poisonous. Its toxic seeds are ground into a doughy concoction and released into shallow rock pools to stun fish. The number needed for that night’s meal are then simply scooped up, cooked eaten – all save the toxin-carrying gills. The other fish are left to escape until another day.  \u003C/p\u003E\r\n\u003Cp\u003ENext stop is the Beach Almond Tree. \u003C/p\u003E\r\n\u003Cp\u003E“When the nut is green, it tastes like absolute rubbish,” spits out Juan after tasting a green hued sample. “When the nut is old, it tastes just like an almond but sweeter. At the right time of the year, kids to come down in large groups to snack on the fruits of this tree.” \u003C/p\u003E\r\n\u003Cp\u003EAt that, we head out to the world’s first supermarket, the mudflats, where Juan helps us discover the some of the planet’s oldest food sources. Sting rays, he advises, are best eaten in August when they are full of fat and tasty. Meanwhile, the wriggling thing in the sand is a worm; the favoured food of the stingray. But mostly we learn that we shouldn’t eat a pointy grey shell.  \u003C/p\u003E\r\n\u003Cp\u003E“It's got bacteria in it that will make your throat itchy and if you are susceptible, you will go into an anaphylactic state.”  \u003C/p\u003E\r\n\u003Cp\u003EOn return, Juan prepares the grab bag of goodies we have collected during our forage on the mudflats. There is one incredibly sweet and full-meat sand crab, a handful of cockles, and a dozen Periwinkles.  \u003C/p\u003E\r\n\u003Cp\u003EUsing home-made chilli vinegar fermented in a jar over nine years, (“Just find an old screw top jar, add in chillis, top up with brown vinegar and add in two teaspoons of salt, and you’ve got the perfect recipe”) Juan flash fries the crustaceans, at the same time teaching us about artefacts handed down from his ancestors.  \u003C/p\u003E\r\n\u003Cp\u003ELike the shell of a massive green sea turtle, a protected species fished by the local Indigenous people for family get togethers. “This 200kg turtle was caught for a wedding for 220 people, all from our little dinghy,” Juan explains. “Brandon (Juan’s brother) was under water for about a minute struggling to get it. You have to have good lung capacity to catch a turtle.”  \u003C/p\u003E\r\n\u003Cp\u003E“We like steaming turtle. We throw in the innards, everything with lemon grass, soy base, ginger garlic and boil it for three to four hours. It comes out like a seafood casserole, a delicacy that we call ‘lamb of the sea’,” says Juan.  \u003C/p\u003E\r\n\u003Cp\u003EJuan’s father is Bennett Walker, a celebrated ranger in these parts of the coast and a man who has met Bill and Hilary Clinton. But that’s not what Juan is proud of. It’s the fact that the extremely rare tree kangaroo (one of only two species that have re-evolved from the possum and now living in trees found around the Cairns region) was named after his Dad: the Bennett Tree Kangaroo. \u003C/p\u003E\r\n\u003Cp\u003EHe is also fiercely proud of Grandma Walker, the last of his clan to be born in the open Country.  \u003C/p\u003E\r\n\u003Cp\u003E“She was born in the bush and died when the first mobile phone was invented. She saw so much change,” he says in awe.  \u003C/p\u003E\r\n\u003Cp\u003EAfter three hours it’s time to leave the ancient past and head back to our modern adventures.
